White Chocolate Brownies

  • 1 1/4 lbs white chocolate
  • 1 lbs butter
  • 5 whole egg
  • 1 lbs sugar
  • 2/3 lbs cake flour
  • 5/8 lbs chocolate chunks

Melt white chocolate and butter together. Move to a bowl and add sugar. Mix thoroughly. Add eggs one at a time while the mixer is running on low speed. Add flour all at once and mix until just incorporated (do not over mix). Fold in chocolate chunks. Grease bottom and sides of one sheet pan. Pour mixture into pan. Make sure to spread brownie mixture evenly and into the corners. Bake at 325 -350 degrees for approx. 20 - 25 minutes. When the edges of the brownie begin to turn brown, stop baking. The middle of the brownie should be firm. Cut to desired size and dust with powdered sugar and serve.
